Tapioca Gum Cracker Recipe

Tapioca gum or hydrated sweet powder is a very versatile ingredient in the kitchen. This food is derived from cassava and produces, in addition to tapioca, bread, cakes and pies. It is a great choice for gluten-free or lowcarb recipes.

Ingredients for making Tapioca Gum Cracker:

 250 grams of tapioca gum

 ¾ cup of rice flour

 ¾ cup of sugar (120 grams)

 1 pinch of powdered ginger (optional)

 1 pinch of powdered cloves (optional)

 1 pinch of powdered cinnamon (optional)

 3 tablespoons of coconut oil or butter

 1 egg

How to make Tapioca Gum Cracker:

Mix all dry ingredients in a bowl: tapioca gum, rice flour and sugar. If you want, also add a pinch of ginger, cloves and cinnamon to get more aromatic cookies!

Tip: Tapioca gum is the same product used to make frying pan tapioca. If you don't have wheat intolerance, you can use wheat flour instead of rice flour.

Add coconut oil and mix until it forms a crumb, as in the photo.

Place the egg lightly beaten and mix the dough with your hands until it has an even consistency. Let it sit for 30 minutes at room temperature.

Tip: If the mixture is too dry after placing the egg, add 1-2 tablespoons of water.

Shape the cookies and bake in a preheated oven at 200 degrees for about 25 minutes or until the cookies are set.

Tip: If you want, you can transfer the raw biscuits to a baking sheet and take them to the freezer to freeze. Lasts up to 3 months.
